When I was at the Asian market, I asked about kaffir lime leaves. They didn't have any but gave me lemon leaves instead. Would that have worked OK? If so, how do you use them (or the lime leaves for that matter)? Chop 'em up? Toss 'em in then remove 'em before serving (like bay leaves)? How much do you use? I used the lime zest instead, and it worked great, but I was curious about the leaves. Thanks.
